thực hiện nên giới hạn của đề tài là chỉ khảo sát những mẫu tôm nguyên liệu (tôm sú
và tôm thẻ) ở thị trường Thành phố Cần Thơ. Nội dung thực hiện:
 Bước 1: Chọn lọc các yếu tố phân tích.
 Bước 2: Thu mua mẫu ở một số chợ trên địa bàn Thành Phố Cần Thơ.
 Bước 3: Xử lý mẫu theo nguyên tắc: mẫu sau khi được đồng nhất, chiết
xuất bằng ACN và làm sạch bằng phương pháp QuEChERS.
 Bước 4: Phân tích mẫu bằng máy LC/MS/MS và xử lí kết quả.
Sau thời gian thực hiện đề tài đã xây dựng các thông số, chọn lọc điều kiện tối
ưu cho quá trình thực nghiệm. Kết quả phù hợp với tiêu chuẩn của AOAC:
 Giới hạn phát hiện LOD = 3ppb.
 Đường chuẩn tuyến tính trong khoảng nồng độ 1–16ppb.
 Hiệu suất thu hồi nằm trong khoảng từ 60 – 115%.
Thu mua và phân tích 56 mẫu tôm, có 22/56 mẫu phát hiện dư lượng
ethoxyquin. Trong đó có 12/22 mẫu có dư lượng cao hơn MRL, 10/22 mẫu có dư
lượng thấp hơn MRL.

Từ kết quả thu được ta thấy:
 Tỉ lệ mẫu có dư lượng ethoxyquin vượt mức cho phép vẫn còn cao.
 Việc sử dụng ethoxyquin như một chất chống oxy hóa vẫn còn rất phổ
biến.

Xuất phát từ thực trạng này, chúng tôi tiến hành đề tài: “KHẢO SÁT HÀM
LƯỢNG CHẤT CHỐNG OXY HÓA - ETHOXYQUIN CÓ TRONG TÔM Ở
MỘT SỐ CHỢ TRÊN ĐỊA BÀN THÀNH PHỐ CẦN THƠ”. Đề tài được tiến hành
tại TRUNG TÂM DỊCH VỤ PHÂN TÍCH THÍ NGHIỆM TP HCM - CHI NHÁNH
CẦN THƠ .
II. MỤC ĐÍCH CỦA ĐỀ TÀI
Đề tài được thực hiện nhằm mục đích đánh giá được phần nào dư lượng của
chất chống oxy hóa – ethoxyquin có trong tôm ở một số chợ thuộc địa bàn thành phố
Cần Thơ. Đồng thời, giúp các nhà sản xuất nâng cao chất lượng tôm để cung cấp cho
thị trường trong nước và ngoài nước.
III. MỤC TIÊU CỦA ĐỀ TÀI

 Đọc tài liệu tìm hiểu về phương pháp sắc ký, chất chống oxy hóa ethoxyquin và
các thông tin có liên quan đến đề tài.
 Chọn phương pháp để thực hiện đề tài.
 Tiến hành thu mẫu tôm đại diện tại các chợ trên địa bàn thành phố Cần Thơ.
 Tiến hành xử lí mẫu và phân tích hàm lượng của chất chống oxy hóa -
ethoxyquin có trong mẫu đã thu mua bằng phương pháp sắc ký lỏng ghép khối
phổ.
 So sánh hàm lượng ethoxyquin đã phân tích được với giới hạn cho phép và đưa ra
kết luận.
IV. ĐỐI TƯỢNG NGHIÊN CỨU
Đề tài được tiến hành trên nền mẫu là tôm sú và tôm thẻ (tôm nguyên liệu).

động. Ông đã đặt tên cho kỹ thuật này là chromatography. Tên này được ghép bởi hai
từ Hy Lạp “chroma” có nghĩa là “màu” và “graphein” nghĩa là “viết”. Trong mấy thập
kỷ tiếp theo, nghiên cứu về lý thuyết và ứng dụng của sắc ký đã phát triển rất mạnh
mẽ.
Tất cả các loại hình sắc ký đều có nguyên lý tách giống nhau: mẫu phân tích
được hòa tan trong một pha động, pha này có thể là một chất khí, chất lỏng hoặc chất
lỏng siêu tới hạn. Pha tĩnh được cố định trong cột hay trên bề mặt vật rắn. Cho pha
động di chuyển qua pha tĩnh một cách liên tục và không hòa lẫn với nó, khi đó, các
chất tan là thành phần của mẫu sẽ di chuyển qua cột theo pha động với tốc độ khác
nhau tùy thuộc vào tương tác giữa pha tĩnh, pha động và chất tan. Nhờ tốc độ di
chuyển khác nhau, các thành phần của mẫu sẽ tách riêng thành dải, làm cơ sở cho phân
tích định tính và định lượng.
I.2. Phân loại phương pháp sắc ký
Người ta phân biệt nhiều loại kỹ thuật sắc ký khác nhau dựa vào bản chất của
hai pha sử dụng hoặc dựa vào bản chất của các hiện tượng xảy ra trong quá trình tách
các chất.
I.3.1. Phân loại sắc ký theo bản chất của hai pha sử dụng

Sắc ký cột : Pha tĩnh được nén trong một trụ hình tròn và pha động di chuyển
xuyên ngang qua trụ đó, có thể nhờ trọng lực, nhờ một bơm cao áp có áp suất lớn hoặc
nhờ áp lực của chất khí.
Sắc ký phẳng: Pha tĩnh được tráng thành một lớp thật mỏng lên trên một tấm
phẳng. Khi sắc ký, tấm này được dựng đứng và pha động di chuyển ngang qua bề mặt
tấm này, có thể theo chiều từ trên xuống hoặc từ dưới lên.
I.3. Một số đại lượng đặc trưng cho phân tích sắc ký
I.3.1. Hệ số phân bố ( Partition coefficient)
